Fluffiest Pancakes

Requirements#

  • 2.5 cup all-purpose flour
  • 3 tbsp sugar
  • 2 tsp kosher salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2.5 cup buttermilk
  • 8 tbsp melted butter
  • 2 egg yolks
  • 2 egg whites
  • some chocolate chips
  • some small fruit
  • some butter
  • some maple syrup
  • 1 liquid measuring cup
  • 1 small pan

📝 Instructions#

Step 1#

In a large bowl, add the all-purpose flour, sugar, kosher salt, baking powder, and baking soda and whisk to combine.

Step 2#

In a medium bowl or liquid measuring cup, add the buttermilk, melted butter, and egg yolks and whisk to combine.

Step 3#

Add the buttermilk mixture to the dry ingredients and gently fold with a rubber spatula until just combined.

Step 4#

Add the egg whites and fold until just combined. Be sure not to overmix. Some lumps are okay.

Step 5#

Let the batter rest for 30 minutes at room temperature.

Step 6#

Add oil to small pan and heat over medium low heat. Reduce the heat to medium-low and add ⅓ cup (75 g) of batter to the pan.

Step 7#

Cook for 3 minutes, until bubbles start to appear on the surface. If adding any toppings like chocolate chips or small fruit , sprinkle over the pancake. Flip the pancake over and cook for another 2 minutes, until golden brown. Repeat with the remaining batter.

Note

Small fruit includes (but not limited to) blueberries, raspberries, blackberry, etc

Step 8#

Serve the pancakes with butter and maple syrup.
